🄣 Nourishing Chicken Pot Pie Stew (with Meat Stock)

Sometimes healing looks like deep journaling or early bedtime routines…And sometimes it looks like standing in your kitchen with a wooden spoon and a bubbling pot of soup that feels like a hug from the inside out. šŸ¤

This recipe was born out of one of those slower days—when I had leftover roast chicken and wanted something both nourishingĀ and comforting.Ā Something that would feed the body andĀ the soul. And that’s exactly what this stew does.

It’s rich in minerals and flavor, grounded in healing ingredients, and simple enough to throw together on a busy evening. Plus, it’s the perfect way to use up that last bit of roast chicken or leftover veggies in the fridge. šŸ™ŒšŸ¼

4–6 generous servings

šŸ›’ Ingredients

  • 2–3 cups cooked chicken, chopped or shredded

  • 2–3 tbsp butterĀ (or avocado oil or olive oil)

  • 1 small shallotĀ or ½ onion, finely diced

  • 2–3 cloves garlic, minced

  • 2–3 medium carrots, chopped

  • 2 celery stalks, chopped

  • 1–2 small potatoes, diced (Yukon Gold or red work great)

  • Optional: 1 small zucchini, ½ cup peas, or summer squash

  • 2–3 cups chicken meat stockĀ (see this postĀ for how to make it)

  • 1 cup creamĀ or whole milkĀ (sub coconut milk for dairy-free)

  • 1 tbsp arrowroot or tapioca starch powderĀ (or flour of choice) to thicken

  • Salt and pepper to taste


🌿 Herbs & Spices That Make It Magical:

  • 1 tsp dried thyme

  • ½ tsp sage

  • ½ tsp turmericĀ (optional, but anti-inflammatory!)

  • ¼ tsp paprika

  • 1 tsp parsleyĀ (fresh or dried)

  • Dash of nutmegĀ (trust me—it’s the pot pie secret!)

  • Optional: a small bay leaf while simmering (remove before serving)


šŸ² Instructions

  1. SautĆ© the aromatics:In a large pot, melt the butter (or warm oil) over medium heat. Add the shallot or onion, garlic, carrots, and celery. SautĆ© until softened and fragrant, about 5–7 minutes.

  2. Add potatoes and optional veggies: Stir in the diced potatoesĀ and any optional veggies like zucchini, peas, or summer squash. Cook for 2–3 minutes to begin softening.

  3. Add meat stock and simmer: Pour in the meat stockĀ and bring to a gentle boil. Reduce heat to low, cover, and simmer for 10–15 minutes, or until potatoes are fork-tender.

  4. Add chicken and cream: Stir in the cooked chickenĀ and your choice of cream, whole milk, or coconut milk. Let everything simmer gently together for another 5–10 minutes.

  5. Add herbs and spices: Stir in thyme, sage, paprika, parsley, nutmeg, turmericĀ (if using), and salt and pepper to taste. You can add a bay leafĀ at this stage, just remember to remove it before serving.

  6. Optional thickening: If you’d like a thicker stew, mix arrowroot powderĀ or tapioca starch with a few tablespoons of cool water or milk to make a slurry. Stir this into the stew and let it simmer for a few more minutes until it thickens.

  7. Taste and serve: Adjust seasoning if needed, then serve hot or allow to cool and store as a freezer meal.
